Chocolate Chip & Chunk Cookies

So I have had my Kitchen Aid for less than 24 hours, and am having so much fun already 🙂

My boys are loving my new little assistant almost as much as I am, as so far I have made a lovely wholemeal and chia seeded loaf, Pancakes for breakfast, Protein bars (see recipe in archives) and these delicious cookies, that are simply melt in your mouth delicious!

I thought with it being December (cookie season) I would share this recipe first, so these are pretty simple and take all of 10 mins to prep and a further 10 minutes to bake.

Of course I used my kitchen aid but you can use any hand held mixer/beater for this.

So to get started first off preheat your oven to 180 Degrees C, and then go grab your Ingredients:

90 gram butter (melted and cooled – I just placed it in the microwave for 30 seconds)

70 gram white sugar

35 gram raw brown sugar

1 tsp Vanilla paste

1 Egg

160 gram plain flour

0.5 tsp Bicarbonate soda

pinch of salt

55 gram mixture of choc chips and chunks

Method:

Mix together the salt, Bicarbonate of Soda and the flour in a large bowl

In a new bowl cream the butter and sugars by beating until you achieve a creamy texture

Add the vanilla and Egg to the butter and sugar mixture, and beat on a low speed for about 20 seconds until combined

Add the flour mixture to the creamed sugars and mix until almost combined into a dough, add the chocolate chips & chunks and combine using a spatula

using your hands, bring the mixture to form a large ball

line 2 baking trays with baking paper

make 12 balls and place 6 on each baking tray

Bake for 7 – 10 minutes until the cookies look barely browned and cracked.

Place on a cooling tray and wait until cool (if you can!)
