Creamy Coconut Rice Pudding

Growing up Kheer was one of my all time favourite desserts.

Kheer is an Indian rice pudding infused with flavours such as cardamon, Almonds, Pistachios, Raisins and/or Coconut.

This is my simple yet tasty take on Kheer. I have left out the Raisins and nuts as the kids prefer it without. But should you wish to, you could add some halved toasted almonds and pistachios crumbled on top when serving, or add about 2 tablespoons of cooked and peeled Almonds to the pudding about 10 minutes before the end of cooking time.

If you want to add raisins or cardamon add them when you add the milk.

So heres what you’ll need for this minimum effort pudding

Ingredients:

0.5 – Cup water

2 cups coconut milk

2 cups milk

2 tablespoons sugar

0.5 cup pudding rice

Method:

Wash the rice under a tap until the water runs clear

Add the rice and water to a pan on a medium/high heat, until almost at boiling point

Add the sugar and allow to melt then add the coconut milk and fresh milk and bring to the boil

Reduce the heat and simmer for 20-25minutes until the mixture has thickened and the rice has cooked.

Serve hot or cold and Enjoy!
