Basmati Vegetable Rice

So……. finally after a few hectic days I get the time to sit down and write up the Rice recipe!

This is a really simple rice dish that can accompany many mains! It tastes fabulous with a chick pea curry and a dollop of natural yogurt (recipe to follow for the chickpea curry..)

There are a variety of vegetables that can work nicely in this recipe: Sweetcorn, diced red peppers, diced courgette, diced mushrooms… but here’s what I used this time round:
400g Basmati Rice
45g Carrots (finely diced)
150g Frozen peas
Cumin 1.5 tsp
2.5 litre water

Method:
Rinse off the rice and put to one side

I just give the rice a quick rinse under the tap.

Heat the water in a large pot, when almost ready to boil add the rice, cumin, peas, carrots and cook on a high heat for about 20 minutes.

To check the rice is done take a teaspoon and scoop out a few grain of rice, allow to cool and then check to see whether the rice is cooked through by gently squeezing a grain of rice between your forefinger and thumb.

Once cooked drain and serve!
