Carrot & Potato Soup Quickie

My little boy is just recovering from Bronchitis and was really put off his food for the most part of the week, docs assured me to make sure he got plenty of fluids and to keep him away from cold foods: So it was back to basics ie Soups and Mashes for him.

Luckily the little man loves soup and when asked “What would you like to eat?” he would promptly reply “Pous” which is what he calls soup 🙂

I love this recipe as it is deliciously filling and like most soups its so easy to make. If like us you are “soupies” definitely give this recipe a go.

Here’s what you will need:
1 Leek (sliced)
280g Carrots (peeled & sliced)
1tbsp Sunflower Oil
2 Garlic cloves (peeled & crushed)
240g potatoes (peeled & diced)
650ml Vegetable stock
200 ml milk
handful of Fresh coriander (chopped)

Heat the oil in a medium pan and add the garlic and leek, cook for about 3 minutes and then add the carrots and cook for a further 5 minutes, add the potatoes and mix together, add the stock and allow to simmer for 20 minutes on a medium – high heat

Check with a fork whether the potatoes and carrots have softened, once soft then take off the heat and puree with a handheld blender

Add the milk and coriander and put back on a medium heat and cook for a further 5 minutes… and done!

Soup for the whole family to enjoy!
