As so many people tend to be sniffling coughing and spluttering this time of the year I thought I would make a soup that would give us a whole heap of health benefits, and we all know the super nutritious vegetable of the lot is Broccoli.
My husband is not a Broccoli fan however even he enjoys this, and it is so easy and quick to make why not give it a try.
1 Onion (diced)
3 Garlic cloves (grated/crushed)
1.5 Tbsp of Olive oil
90g Swede (diced)
1/2 Leek (thinly sliced)
2 Carrots (peeled and thinly sliced)
100g grated Mozzarella
500ml Vegetable stock
200 – 300ml hot water
Heat the oil in a large pan and add the onions, cook on medium heat until the onions get translucent in colour, add the carrots, leek, garlic and swede and cook for another 5 minutes before adding the broccoli.
Cook all vegetables for a further 5 minutes and then add the vegetable stock and hot water and bring to the boil
Reduce heat and allow to simmer until all the vegetables are cooked.
Using a hand held blender, blend the soup to a smooth consistency.
Return to a low heat adding the cream and cheese until the cheese has melted.
Note: I have not added salt or pepper as the recipe is altered to make it “Toddler Friendly” you can add this at the end to taste.
Serve on its own or with some crusty bread.
